A delicious Christmas cake, locally made with the highest quality ingredients. The perfect gift for Christmas or keep for your own family!

Beautifully presented in a gift box, this 2kg square cake is available for $60.00 or $62.50 for gluten free.

All proceeds will go towards student resources.

A much-loved family recipe, the Christmas Cake is bursting with fruit. Carefully selected sun-dried apricots, raisins, sultanas, cherries and tangy citrus, are soaked in Kaiapoi Distillery’s exceptional quality crafted brandy, warmed by the Canterbury sun and turned regularly over three days making the fruit plump and juicy while developing the flavours and heavenly aromas.

Fresh free range local eggs and locally sourced flour mixed with the finest festive spices help to bind the mixture.The cake is hand decorated with almonds and pecans, cherries and ginger and once baked, is brushed with brandy and glazed with homemade Otago apricot jam. Each cake is then individually wrapped and regularly brushed with brandy during the four-month maturation process.

Christmas Cake Ingredients

Christmas isn’t Christmas without an old-fashioned homemade moist deep rich Christmas cake.

Filled with apricots, raisins, sultanas, cherries, tangy citrus fruits soaked in locally made brandy for 3 days. Fresh eggs, creamy butter, rich dark treacle, brown sugar, quality baking flour plus seven yummy spices to give that perfect Christmas cake taste!

Topped with a variety of nuts, cherries, ginger and while still hot from the oven brushed generously with brandy then glazed with homemade marmalade jam mixed with fresh lemon juice.

Slow process each cake is baked with pride during eight weeks of preparation and nurturing allowing the cake to stay moist and delicious for months.

Butter Salted (12.6%), Eggs (12%), Wheat Flour (9%), Sugar Brown (7.5%), Almond Natural Whole & Blanched, Pecan Nuts (4.3%), Brandy, Treacle, Crystallised Ginger, Spices.

Gluten free cakes

We use Rice Flour which is perfect for baking, as it doesn’t impart any flavours. Apart from the flour, the ingredients are the same as our traditional cakes.

Please note that we are very conscientious about keeping all gluten free baking surfaces, utensils and ingredients separate from our traditional baking and as an extra precaution, we only bake gluten free on allocated days once the entire kitchen has been completely cleaned down.
